This is an opportunity for a passionate and committed hospitality professional who has a real drive to deliver outstanding food in a unique and luxurious environment to join our team. We are looking for a Senior CDP to join our Pastry team.


  • Assisting the Sous Chef in creating menu items, recipes, developing dishes and costings.
  • Maintain good knowledge of cooking methods, styles and alternatives.
  • Produce all necessary food for all food service operations as required and as instructed by the senior Chef.
  • Prepare required mis en place that is required for a smooth kitchen operation and ensures that the section is set prior to service.
  • To prepare food and provide prompt, courteous and accurate service to all the customers (both internal and external)
  • Ensure adherence to all relevant health, safety and hygiene standards for the Kitchen.
  • Ensure that the quality & quantity standards of preparations and presentations are adhered to.
  • To work alongside the Sous Chef to manage daily kitchen activities, including overseeing staff, assisting with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking.
  • Provide guidance and supervision to all junior kitchen staff members
  • Ensure that allocated section is always kept clean and all prep is completed.
  • Pro-active ordering, maintaining minimum par levels of food for your section of the kitchen.
  • Maintaining quality and quantity control in all aspects, from portion control to freshness of the
  • product presented.
  • Ensure correct stock rotation procedures are followed.
  • Maintain full awareness of all menu items, their recipes, methods of production and presentation standards.
  • Deputise in the absence of senior chefs.
  • Maintain and implement preservation standards for the proper handling of all food products at the right temperature.
  • Be in the know to current pastry and baking trends and maintain a creative portfolio to use as resources for all food and beverage outlets.
  • Creating of showpieces in chocolate, sugar, marzipan, etc.

Requirements

  • 5 years’ relevant kitchen experience in a supervisory role.
  • Computer literate in MS Excel, MS Word and Gmail.
  • Good communication skills.
  • Diploma in Hotel Management / Professional Cookery advantageous
  • Pastry Courses in Sugar, Chocolate and Breads beneficial
  • Thorough knowledge of patisserie / desserts, breads, baking, cooking styles, hygiene & safety standards
