The iconic Hotel del Coronado is looking for a talented Assistant Director of Food & Beverage to help lead this incredibly talented team! It's an exciting time to join the resort with a recently completed $200 million dollar renovation project.

Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 700 rooms (to include cottages and villas), 96,000 square feet of meeting space, and 12 food and beverage outlets. This includes 4 restaurants, 2 bars, food truck, marketplace, ice cream shop, and in-room dining.

In this role you will oversee a multi-million dollar food and beverage operation, managing a team of up to 200+ in a union environment. The ideal candidate will be an engaging, exceptional leader with a drive for innovation and a passion for leading and building winning teams. At least 3 years'experience as an Assistant Director of F&B, Director of Restaurants and/or Director of F&B in high volume operations is required. Luxury experience is required and Union experience is a plus!

An Assistant Director of Food and Beverage is responsible for assisting in the direction and organization of activities and services of all hotel food and beverage outlets (restaurants, lounges, room service, coffee shops, etc.) in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Responsible for overseeing the smooth and profitable operations all Food and Beverage and Banquet operations for The Hotel Del. Directs the managers of the specific food & beverage service areas to ensure the highest quality standards are met. Oversees food & beverage budgets and controls. Administers food & beverage marketing programs. Ensures service standards are met and continually monitors quality of service level and food and beverage offerings.


What will I be doing?

As an Assistant Director of Food & Beverage, you will be responsible for the following:

  • Assist in the management of all Food and Beverage operations to include, but not limited to, guest service, food and beverage quality, inventory management, outlet reservations and occupancy, systems management, budget and forecasting, marketing, report generation, department management and meeting participation and facilitation
  • Monitor and develop team member performance to include, but not limited to, providing supervision and professional development, scheduling, conducting counseling and evaluations and delivering recognition and reward
  • Develop and implement menus and food and beverage marketing strategies in partnership with the Director and the culinary team
  • Monitor and assess service and satisfaction trends, evaluate and address issues and make improvements accordingly
  • Ensure compliance with health, safety, sanitation and alcohol awareness standards
  • Recruit, interview and train team members
  • Shop competitive hotels and restaurant operations to keep abreast of marketing techniques and promotions.
  • Perform duties of outlet managers when necessary to ensure property management coverage is maintained.
  • Perform duties of line employees as needed under high volume and emergency situations.
  • Other duties as assigned by the Director of Food & Beverage.
  • Serves as a point of contact for guests.
  • Coordinates all operational functions of the food & beverage department, kitchen, and restaurant.
  • Supervises food & beverage managers, ast manager, supervisors, servers, bartenders and kitchen staff.
  • Understands the concepts of the internal and external guest and treats each with respect and professionalism.
  • Attends all necessary meetings and disseminates information accordingly.
  • Develops and maintains monthly training sessions.
  • Oversees scheduling of all hotel F&B associates and monitors/adjusts staffing levels on a daily basis.
  • Manage schedules throughout the year to be properly staffed and keep payroll within budget.
  • Maintains all service standards in F&B operations.
  • Conducts detailed performance reviews for assigned staff.
  • Oversees/coordinates the set-up and break-down of all meetings and F&B events on or off premises.
  • Knows how to read and interpret catering contracts for set-up, service, and billing purposes.
  • Coordinates the set-up of all equipment, supplies, and /or furniture required for each function.
  • Understands how to operate POS systems, purchasing systems, labor managements systems
  • Conducts daily inspection of equipment and facilities, front of house and back of house, to ensure cleanliness and upkeep; assists with cleaning whenever necessary.
