About the role...

Supports and assists the Restaurant Assistant Managers in the daily operation of the restaurants and/or bars.  This position is responsible for providing the best possible experience for the guest, cleanliness standards, as well as financial controls.  Participates in on-the-job training, guiding MCs during everyday operations, and adhering to guest issues; ensuring that they consistently achieve the high standards demanded by LEGOLAND Hotel.  Starting Pay: $12/hour

What you’ll be doing...

  • Monitor and ensure all aspects of guest service in the restaurants. Provide ongoing service training to staff, report all staff relations to be managed by .
  • Issue preshift meetings with team, dress and appearance checks and shift operation is completed with World Class Service expectations.
  • Ensure strict compliance with all relevant Hygiene and Safety legislation requirements.
  • Train and motivate a positive, professional and strong team, with a focus on guest satisfaction, quality of food and delivery and development of a high level of skills; act as a role model in leading this through the Merlin values
  • Operations – Oversees and coordinates the operational effectiveness of all assigned locations.  Implements and enhances high level of service, quality, and sanitations standards within the outlets.  Ensure that all guests are served in an efficient and friendly manner with children as a primary focus.  Must understand and meet all expectations and have the ability to communicate positively to all guest and MCs.  Communicates daily operational and financial objective to team members on a daily basis
  • Marketing – Assist in all aspects of the hotel are consistent with the LEGOLAND and Merlin Brand Image. Encourage upselling to increase profitability.  Up to date on all park information including hours of operation, special events and pricing.
  • Financial – Must be knowledge of Loss Prevention procedures and training in bars is a key responsibility for this role.  Must be able to accurately operate a POS ordering system and Credit Card PED systems and maintain all server/bartender closing records on a daily basis.  Take full responsibility for all refunds, voids and closing paperwork.
  • Development - Responsible for motivating, training, cross-training and developing the Model Citizens.  Provide positive and corrective feedback to all team members to improve performance output, with the assistance of the Food & Beverage Leadership Team.
  • People – Must understand and meet all guest expectations and have the ability to communicate clearly.  Provide service to our guests in a friendly, efficient, and courteous manner. 


Who we’re looking for...

Requires at least 6-12 months of practical food service leadership experience in the LEGOLAND Florida Hotel. Full-service experience needed, and bar experience a plus. Must be customer service focused and have an understanding of customer expectations. Must possess strong communication skills. Effective organizational and problem-solving skills with the ability to make quick decisions is required. Ability to work as part of a team and to develop others within the team structure is required. Must be willing to work flexible hours, including mornings, evenings and weekends to support the Hotel operations.
