About me
I am a graduate of the Certified Master Chef program (Canadian Culinary Institute and Humber College) in 2018.
My career started with seven years as a chef training manager and Sous Chef for the Hilton Shanghai. I then spent nearly four years working in Germany as the Executive Sous Chef at the restaurant, “Zum Schwarzen Stern” in Frankfurt, Germany. It was worlds away from my starting place. I was then an Executive Sous Chef at the Hilton Toronto before joining George Brown College. I worked at George Brown College from August 2005 to June 2020. Started as a part-time chef professor, then spent two years as a Chef Technologist at The Chef School and student-operated “Siegfried’s” restaurant. Eventually assuming the role of Chef de Cuisine at The Chefs’ House in 2008.
I am currently working at Humber College as a faculty/culinary instructor. I am also working in the capacity of corporate chef at Bronwn Co here in Canada.
From servicing both a small fine-dining kitchen as well as a large quantity food operation, I have a variety of experiences. I am expertly versed in kitchen management, staff training, recruitment, performance management, skills assessment, menu planning, cost control, and purchasing management.
