STRATEGY

  • Ensures the implementation in the hotel bars and restaurants of the company F&B strategy, rules and procedures (products, orders, service standards, SOPs)
  • Responsible for communicating operational needs, tools, product and quality improvements to the hotel Director F&B Identifies and proposes improvements to optimise efficiency in hotel restaurants and bars
  • Ensures that the restaurant and bar teams are aware of the technical specifications of the different outlets.
  • Participates in daily briefings to be aware of the hotel situation and department, in follow-up meetings on service orders to ensure that events occur as planned and in the monthly hotel meetings with updated results for the department as required
  • Responsible for the equipment and machinery in hotel restaurants and bars, coordinating the maintenance, decoration, cleaning and good condition of facilities. Verifies the replacement of tablecloths and cutlery in poor condition reports breakdowns to the technical services department.
  • Responsible for the image, ambience and decoration of the restaurant; coordinates the cleaning of customer areas as well as ensures the correct conditioning of dishes, cutlery and equipment in general


BUDGET

  • Works with the Director F&B to prepare the annual budgets for bar and restaurant providing all the information required
  • Responsible for the financial results of the department, ensuring profitability and monitoring costs and revenues every day
  • Responsible for managing direct costs in the business unit (within the defined framework) for both beverages and personnel costs (shifts, recruitment, work environment, etc.)
  • Controls budget compliance and inventory, reviews departmental costs and monitors compliance with corporate administration and procurement
  • Assists in monitoring departmental KPIs:  raw material costs, staff, order tracking, staff (productivity, ratios in breakfast room, bar, restaurant, events), Reviewpro and Mystery Guest


HUMAN RESOURCES

  • Plans the work of restaurant and bar staff based on the weekly and monthly work plan, assigning the levels and rosters
  • Ensures the appropriate presentation of their staff.
  • Holds regular service briefings and meetings.
  • Responsible for the workplace environment in restaurants and bars and the development of action plans


SECURITY

  • Supervises the implementation of HAPPC regulations (Hazard Analysis and Critical Control Points) on a daily/weekly/biweekly/monthly basis


DAILY OPERATIONS

Start of the service

  • Makes orders based on the service needs
  • Ensures the coordination of the kitchens and seating areas to optimise the delivery of dishes and service
  • Participates in team planning.
  • Responsible for the communication of orders
  • Responsible for the preparation of cold stores and store rooms


Outlets

  • Participates in the weekly/biweekly analysis of planned services (restaurant dinner covers, bar covers) with the other teams involved
  • Organises staffing levels for the evening service


Others

  • Monitors complaints, incidents, daily operations, pre and post-arrival.
  • Participates in the control of hotel consumption and placing new orders

  • Implement sustainable and healthy consumption based on local products and promoting the local cuisine in our destinations
  • Ensure the reduction of food waste


QUALIFICATIONS

  • 3-5 years experience in leading or at least assistant F&B Outlet Manager position
  • Fluent German and excellent English language skills
  • Valid work permit for Austria
  • Hands on mentality
  • Passion for hospitality and customer service
