LEGOLAND Florida Resort is a 150-acre interactive theme park dedicated to families with children between the ages of 2 and 12. Position Summary:
Assists the Hotel Head Chef in overseeing the culinary operations and food production of LEGOLAND Florida Resort Hotel kitchens for buffet and a la carte services. Starting Pay Rate: $18.00/hour.

Key Objectives:      

• Assist with the supervision of line cooks.
• Lead, train, and direct kitchen staff in the absence of Sous Chef 2 or Kitchen Manager.
• Guarantee cleanliness in the hotel restaurants, following company standards.
• Ensure that all recipes, food preparation and presentation meet department specifications and commitment to quality.
• Maintain high standard of food quality throughout hotel kitchen operations.
• Ensure written recipes, presentation and SOPs are followed consistently and accurately.
• Supervise kitchen team including chef de parties and stewards to ensure all policies and procedures are followed.
• Establish and maintain cleanliness standards and procedures including Merlin 
• Assist in the review and development of menus/menu items.
Monitor production by following par levels and occupancy guidelines.
• Ensure food quality/ production 

Background and Experience:

Requires at least 5 years of practical kitchen experience, preferably in a themed environment.  Experience and knowledge in food and culinary design is desired.  Must possess strong communication skills, both in verbal and written format.  Effective organizational and problem solving skills with the ability to make quick decisions.  Ability to work as part of a team and to develop others within the team structure is required.

Physical Demands:

Must be able to work in locations offering varying degrees of temperature fluctuations, ranging from freezer to oven areas.
Requires lifting, bending, and repetitious movements.
Intermittent and prolonged standing and walking to move about the park site, and interact with employees.
Hearing sufficient to communicate with individuals in person and by telephone.
Requires lifting of light to moderate loads (10 to 40 lbs.) frequently.
Finger dexterity sufficient to complete paperwork activities and to use a computer.
Visual acuity sufficient to read written materials, to complete paperwork activities, and to drive.

Other requirements

Must be willing to work flexible hours, including evenings and weekends to support hotel operations.
