As a Chef de Partie you will be in charge of a section of kitchen, ensure cleaning and well
organisations of the Partie.
You has to report to the head chef, and in his absence to Sous Chef.
Following the Head chef directives, support him to serve the best quality food, to reach the guest
satisfaction, and special dietary requirements.
Be part of creativity of menu and recipes, following the head chef requirement and suggestions.
As a Team member responsible of a Partie, that will be assigned by Head chef, you has to support
Head chef, to create a professional atmosphere in a kitchen, team players to reach all the
objective that Head Chef and the Kitchen team has to reach.
Be respectful of the Structure, the equipment, and with colleagues.
Following H.A.C.C.P. Manual.
Support the Head chef with FC control, and following the technical schedules generate by Head
chef.

Sobre ti

Plan and execute menus in collaboration with other colleagues;
Ensure adequacy of supplies at all times;
Place orders in a timely manner;
Manage ingredients that should be frequently available on a daily basis;
Follow the directions of the executive and sous chef;
Suggest new ways of presentation of dishes;
Suggest new rules and procedures for optimising the cooking process;
Give attention productivity of the kitchen such as speed and food quality;
Ensure adherence to all relevant health, safety and hygiene standards;
Collaborate with other colleagues and seniors.
Requirements
Proven experience in a Chef de Partie role;
Excellent use of various cooking methods, ingredients, equipment, tools and
processes;
Ability to multitask;
Ability to work efficiently under pressure;
Great time management skills;
Great communication and interpersonal skills;
Knowledge of best and latest cooking practices;
Culinary school diploma;
Good command of the English and Italian language is essential, both written and verbal.
Associations
Report directly to the Sous Chef.

The estate itself sprawls over 500 hectares of woodland, olive groves and vineyards, filled with extraordinary fauna and wildlife. The heart of the property includes a heritage listed 19th century villa.
The restoration of Villa Lena commenced in 2013. Interior designer Clarisse Demory revived the living spaces by recycling and restoring some of the existing Tuscan furniture combined with vintage mid century pieces. This eclectic "neo folk" style creates a fresh and uncluttered atmosphere throughout the hotel. Guests can now enjoy accommodation speckled over several residencies, including rooms in converted stables, self-contained apartments, and private houses.
