BASIC PURPOSE:
Crafting an original beverage program and designing new, innovative cocktails and specialty drinks for the hotel’s signature restaurant.

The Mixologist must thrive in a dynamic, fast-paced environment, maintaining a courteous demeanor with customers, as well as effectively make use of downtime.

ESSENTIAL FUNCTIONS:

Crafting an original beverage program and designing new, innovative cocktails and specialty drinks for the hotel’s signature restaurant.
Prepare syrups, infusions, tinctures, mixed drinks and cocktails of all types to fulfill customer orders.


Prepare and serve a selection of wines, spirits, and mixed drinks from the menu while ensuring consistent pouring, mixing, and blending according to established recipes and established Four Seasons Standards.

Service and take orders from guests seated at the bar area offering interesting, and vivid descriptions of each item, origin, taste and preparation methods; maintain a working knowledge of liquors, wines, beers, ports, Armagnacs, eau de vies, cognacs and specialty drinks.

Prepare weekly schedules for the bar team to adequately cover all shifts. Provide for coverage in case of employee absence and adjust staffing as necessary to meet business demands.

Monitor inventory of beverages to ensure adequate stock is maintained and to prevent excess pours or abuse by staff (10%). Oversee cleanliness of staff and physical bar area, paying special attention to possible health hazards and code violations. Review sales and beverage costs, reconcile any discrepancies in accounting.
Ensure proper cash management.


NON-ESSENTIAL FUNCTIONS:

Assist with the service of food to guests. Assist in making dining reservations and seating of guests. Assist with the cleaning of operational areas.

KNOWLEDGE AND SKILLS:

Education:                 

University or College degree specializing in bar/restaurant management or equivalent experience is preferred.

Experience:                

Minimum One to Two years International experience in an Assistant Food & Beverage Manager position with in a luxury environment.

Minimum two years bartending experience in a fast-pace, upscale environment. Nightclub or cocktail lounge experience preferred.

Two years of cocktail mixology experience, where demonstrating knowledge of exact recipes and presentation methodologies was a requirement.

Skills and Abilities: 

Requires a working knowledge of division operations as well as Four Seasons cultural and core standards, policies and standard operating procedures.

Strong knowledge of wines, spirits, champagnes and mixed cocktails (including high-end specialty cocktails)
Restaurant or Bar pre-opening experience preferred.

Sommelier certification preferred.

Requires ability to operate computer equipment and other food & beverage computer systems.

Requires reading, writing and oral proficiency in the English language.

Eight to ten hour shifts; scheduled days and work hours may vary based on need.
