Purpose
The Waiter role is very important as they are the essential part of the Villa Lena concept. Apart from
providing outstanding service to hotel and restaurant guests, must at all times demonstrate
impeccable product knowledge and lead by good. Ensuring guest expectations are met and
exceeded to create an engaging and memorable guest experience.

Associations
I report directly to the Head Waiter but I am also answerable to Head Bartender and F&B Supervisor on the property. I must interact well with the Estate Executive Managers, guests, suppliers, business partners, other steering committee members and all Estate Employees .

Essential Functions
I must be capable of:
3.1 Knowing the staff Manual, all the information about the upcoming events ,workshops and all
the food and beverage Menus.
3.2 Knowing the floor plan.
3.3 Knowing information about the Estate history & future projects
3.4 Completing all daily opening, ongoing and closing duties to be confirmed by the F&B Manager
/Head Bartender/ Head Waiter .
3.5 Assure customer satisfaction. Welcome Foundation Artists, hotel guests, repetitive guests.
Follow up with management, give feedback.
3.6 Being fully prepared for all bookings in allocated section and aware of all guests request to
ensure these are met.
3.7 Staying updated and informed about daily specials and changes to the menu and inform guests
accordingly.
3.8 Knowing all the dishes and the drinks: what’s in them and their presentations, including; all
wines ,desserts and side-dish items, cocktails and coffees.
3.9 Demonstrate a full knowledge of POS system to ensure ordering process runs smoothly.
Reducing breakages and loss
3.10 Participating in service briefings
3.10 Following and maintaining a outgoing attitude.
3.11 Participating in deep cleaning of the property if requested.
3.12 Following up with the Head Waiter, giving feedback, constantly looking for improvement
3.13 Keeping the general appearance and maintenance of working areas.
3.14 Performing any other duties as daily assigned .
3.15 Reporting to my MOD before I leave .
3.16 Practicing Energy saving and ecological awareness every day.
3.17 Maintaining a clean and pleasant appearance (including , clean and neat grooming, secured
hair etc.) and give the impression of a reputable and organized service provider.
3.18 Ensuring punctuality in attendance. I am of the understanding that tardiness shall be subjected
to disciplinary action.
3.19 Participating in decoration and preparing the property for special events & on a general daily
basis. ( weddings, festivals ect…)
3.20 Understanding and acting upon the legislation in regards to the responsible service of alcohol
and entertainment licenses.
3.21 Constantly checking with guests for feedback if anything could be enhanced with the
experience they are receiving.
3.22 Capability to manage a full restaurant and ensure overall guest satisfaction.
3.23 Attending to guests’ complaints and taking ownership and accountability to find a solution
when applicable. I also understand that I need to inform a manager about any guest complaint.
3.24 Working varying schedules to reflect the business needs of the Restaurant due to the cyclical
nature of the hospitality industry.
3.25 Encouraging work simplification, efficiency and general pride in work performed.
3.26 Ensuring proper, correct order- taking to speed-up service and that guests are receiving the
preferred order.
3.27 Confidently recommending and suggesting specialties to the guests through menu knowledge,
suggestive selling techniques.
3.28 Ensuring that the food and beverage items served are according to the Villa Lena standards
(e.g. presentation, temperature).
3.29 Ensuring that guest check is presented promptly when asked by the guest. This includes
making sure that the guest check is accurate and contains all the items ordered by the guests.
3.30 Master well all payment/cash handling/credit card procedure as per company policy.

In addition to performance of the essential functions, I must support my team any other special tasks assigned on a daily basis by Management

6.2 Being able to stand and exert well-paced mobility for the duration of my shift
6.3 Being able to exert well-paced mobility to maneuver between functions occurring
simultaneously.
6.4 Being able to exert well-paced mobility in limited space and have agility to use and operate all
necessary equipment.
6.5 Being able to grasp, write, stand, walk, and have repetitive motions, bend, climb, listen and have
visual acuity.
7. Qualification Standards
I must have a high school degree or equivalent education.
9. Experience
I should have at least 2 years’ experience as a waiter or Junior Waiter , Ideally I am trained in a free-
standing restaurant environment of an internationally dining group.

shall from time to time whilst in employment with the Restaurant accommodate any other requests to contribute towards the success of the Estate Food and Beverage Department .

The concept behind Villa Lena is to create a genuine but interesting, relaxed and fun atmosphere for everyone who visits within a context of creative exchange. With this in mind, the grounds of Villa Lena host an artist residency attended by international multi-disciplinary artists.
Villa Lena, with its uniquely picturesque setting, is set within easy access to the most celebrated cities of Tuscany. Florence and Pisa with their international airports are only a short drive away.
The estate itself sprawls over 500 hectares of woodland, olive groves and vineyards, filled with extraordinary fauna and wildlife. The heart of the property includes a heritage listed 19th century villa.
The restoration of Villa Lena commenced in 2013. Interior designer Clarisse Demory revived the living spaces by recycling and restoring some of the existing Tuscan furniture combined with vintage mid century pieces. This eclectic "neo folk" style creates a fresh and uncluttered atmosphere throughout the hotel. Guests can now enjoy accommodation speckled over several residencies, including rooms in converted stables, self-contained apartments, and private houses.
