Hilton Anatole is looking for a talented Pastry Senior Sous Chef to join the Pastry Team!

Spanning 45 lush acres north of downtown Dallas, this AAA 4-Diamond property is an icon in the vibrant Design District boasting over 1,600 rooms, 600,000 square feet of banquet space, and 6 food and beverage outlets - 3 restaurants, a marketplace, pool, and in-room dining.

In this role, you will oversee assist the Executive Pastry Chef in overseeing all baking and pastry operations managing a team of 13+.

The ideal candidate will be an energetic leader who thrives in a high-volume environment with a passion for mentoring and developing others, and proven success of consistently executing a high-quality product in a large. This individual must have a well-rounded background in banquets, restaurants, and upscale dining with a keen eye for details and exceptional organizational skills. At least three (3) years’ experience in pastry management in a high-volume operation is required.

What will I be doing?

As that Pastry Senior Sous Chef, you will assist the Executive Pastry Chef to hire, train, supervise, schedule and participate in activities of chefs, cooks, and other personnel involved in preparing, cooking and presenting food in accordance with productivity standards, cost controls, and forecasts needs.

  • Assist the Executive Pastry Chef to listen actively and communicates clearly while interacting with customers to promote food products and directing staff activities.
  • Analyze feedback from clients and team members to make judgments in accordance with the direction of the Executive Pastry Chef. 
  • Take action to implement approved suggestions for improvement.
  • Maintain working rapport with all hotel staff for efficient operation and service to the customer.
  • Organize and conduct meetings with the culinary team.
  • Assist the Executive Pastry Chef to create and implement new menus and individual menu items for all outlets based on current food trends and regional tastes.
  •  Invent menu selections for special banquet themes and parties in accordance with client budgetary guides and expectations.
  • Assist the Executive Pastry Chef to review staff performance and development, as well as accountability. 
  • Create developmental programs for line staff in order to promote a culture of innovation and growth.
  • Uphold safety procedures and cleanliness standards throughout kitchen(s) including walk-in and reach-in boxes.
  • Work alongside staff to ensure proper execution and timeliness of food production, providing hands-on support, as needed.
